Happy St. Patricks Day!!! We have had a long standing tradition each year in my mom making delicious Irish Soda Bread It became so popular she would receive requests each year from every friend and family member we had for her now famous Irish Soda Bread With my healthy and fitness lifestyle and recently determined immunological reaction to wheat as I have not consumed any wheat product in the past three years, an alternative Irish Soda Bread was needed. The Irish Soda Bread Recipe devised is below. It may not be moms but it is certainly delicious, especially with some organic grass fed butter slathered on it with a cup of hot functionised coffee. ☕️ INGREDIENTS 2 large free range organic eggs 1 Tablespoon (15 ml) organic apple cider vinegar 2 Tablespoons (30 ml) organic ghee 1.5 Tablespoons (12 g) organic nutritional yeast flakes 1 cup (120 g) organic almond flour 1/4 cup (28 g) organic coconut flour 3 Tablespoons (36 g) organic ground chia seeds 1 teaspoon (4 g) baking soda 1 teaspoon (2 g) baking powder Dash of Steviva Generous pinch of organic pink Himilayan salt 1/4 tsp Ceylon cinnamon 1 tsp organic vanilla INSTRUCTIONS Preheat the oven to 350 F (175 C). Whisk the eggs with the vinegar in a bowl. Add the melted ghee (which should not be piping hot else it will scramble the eggs) and the nutritional yeast flakes. Mix well. Mix in the remaining ingredients to create a homogenous mixture. You should have a fairly solid mass which you can place onto a tray lined with parchment paper and shape into whatever shape you desire. Bake in the preheated oven for 25-30 minutes or until a cake tester inserted into the center comes out clean. Remove and allow to cool completely before slicing.
