By: Jim Goetz After five long years of anticipation, the experiment was finally set to begin. All of the preliminary lab work was in. Brain mapping was in. Physical performance figures were in. The panel had decided which burger to consume. All that was left was to begin. Dr. Mike asked to begin on July 5 so he had the option of consuming an alcoholic beverage on the 4th. He had one single beverage and that was that. Without organized fireworks and large barbeques to attend this year, partying by intoxication was out. Why individuals enjoy themselves with intoxication as means to celebrate whereas memories of that event are shadowy with often regret of either actions or feelings the next morning occur, I am unsure. But I digress.
Athletes can consume up to 1.6 g/kg. This puts Dr. Mike around what he needs through hamburger patties. An average individual would be more along the lines of 0.8g/kg. While the fat percentage of calories is 64% (not officially 80%), the lack of any carbohydrate whatsoever should cause him to achieve a state of ketosis pretty quickly. This will be tested via urine and blood along the way. Most likely the urine strip will no longer turn purple due to him utilizing the ketone bodies for fuel to survive daily. There were many ways to go about obtaining what we decided would be a weeks worth of burgers at a time. Going daily would be a pain and instrusive to operating both the FIT Clinic and FIT Lab at Functionised. Going a couple times per week still delivers cold hamburger patties afterwards and the next day. So we chose to purchase 140 each week. With the restaurant itself being closed, we had to go through drive through. Perhaps we can do a delivery service in the future but realistically, I wanted to see the reaction on the faces of the employees in the drive through when we ordered 140 burgers. It was quite priceless!!! Dr. Mike got to enjoy his first 10 burgers around 2 pm as he routinely intermittent fasts (16/8) and we had to close the Lab. After the burgers were brought out to our vehicle, we popped the trunk and he enjoyed as we took some film and photos. He said he felt a bit full so stopping at 10 was a good idea. The burgers in reality are not very big. They certainly lose a lot of water in the cooking process and I could have easily downed a couple dozen myself. They are not much bigger than the White Castle burgers I grew up with at 1 am coming home from Yankee games with my dad. We went back to his place to do a little more filming. He consumed another five and left the rest for dinner. The day of filming and food was fun. I myself went home and had a couple end grass fed burgers with some broccoli coated with Primal Kitchen chipolte mayo and a Zevia (Root Beer). The experiment has officially begun. The project is far from over.

Back when we were BioHackHumans, it was agreed upon that Dr. Mike would be the study subject but to what extent this study would go was undecided. At first I wanted to have an individual eat a purely keto meal from a fast food restaurant. Since the Super Size Me Movie used Mc Donalds and Mc Donalds appears to be the most popular fast food restaurant; this is what I had in my head. The meals at first could include salads, burger patties, cheese, etc. As long as Dr Mike would not consume more than 20 g of carbohydrates per day, he could have whatever he wanted at Mc Donalds. However, there were too many variables. If his labs changed over two or four weeks, was it due to the tomatoes in the salad, the cheese, etc? The only variable I cannot account for is the actual baseline. His physiology is what it is and there's no way to make him (or anyone) for that matter- perfect. But to remove all the other variables, I had to settle on one specific type of food. As the general public consumes hoards of hamburgers each summer (BBQ), and there is so much scrutiny between "beef" and the science behind "end grass fed" or "end finished" beef (being higher in omega-3 fatty acids), I decided to use hamburger patties only and water. This would be the only food and liquid consumed for an entire month. The public began to speak though. I was asked, "Why McDonalds"? I replied with, "why the heck not"?!? So to be fair, it was decided to conduct a double blind taste test to ascertain which burger a decent sample size felt was the best tasting. Dr. Mike would then eat that burger.
It's been reported that a McDonalds hamburger bun contains around 10g of sugar. That will assuredly add to the flavor when you combine it with the other flavors of the condiments. The opportunity to determine what is the truest tasting hamburger patty would be a fortunate experience for the taste testers. For good measure, I wanted to add in ground beef from end grass fed cows. I have been told so many times by so many individuals that "it tastes different". Yet different rarely, if ever, meant bad or good. It is my curiosity to determine what is the best tasting beef of these choices (A5 Wagu was not on the table for this taste testing). Before the double blind taste testing took place, the participants were all interviewed to determine what they felt would be their favorite burger patty as well as to ask what they felt would be the end result of Dr. Mike's experience with this film. It was overwhelming how the majority of individuals felt they wanted to like the end grass fed beef best but would probably like Burger King. This is actually what happened. They also wished Dr. Mike well and "will be praying for him". Afterwards, the hamburger buns from Burger King were collected by Chantea and Athena and stacked on one tray. It weighed in at 10 lbs (for the 10 burgers purchased for this event from Burger King). It was an amazing experience for everyone involved and set the precedence for the entire film, Keto Size Me. By: Jim Goetz A little over five years ago, I watched the movie, Super Size Me. In this movie, Morgan Spurlock decided for a month to eat only McDonalds food 3x per day for a month. The caveat was when someone asked if he would like his meal supersized, he had to say yes. The movie was fun but doomed from the beginning. The film was out of control meaning there was no control for this experiment. Would Morgan Spurlock have come out the other size of the month healthy or in the same "nearly dead" manner? In this movie, Morgan Spurlock did not regulate any type of caloric or macronutrient intake. It was quite literally a free for all for what was supposed to be a month. Another feature that lacked was the lack of movement. Morgan Spurlock in no way completed any physical exercise. There was no resistance training or any type of cardio. Human movement is essential for fitness and proper health. At the end of the day though, the movie was highly acclaimed due to its entertainment value. This got my mind thinking. Around this time, the idea of a ketogenic diet was becoming a fad. The more I read up on it, the more I realized there was merit to it. What began as a treatment for epilepsy did appear to have longevity benefits as well as benefits for endurance athletes as well as brain function. The more I researched a ketogenic way of life, the more valid it appeared. I delved into it and for 3 years consumed no more than 50 g of high fiber carbs per day. Even now I consume around 100 g. But I digress. The majority of my calories came from fat. After two weeks, I noticed my body was a slow burning furnace of fuel. It was amazing! I could keep working out and running all day without having to stop to refuel. I loved it! The additional carbs ended up coming from the realization that long term, this lifestyle may affect my thyroid and even liver. Therefore, unless needed for a medical reason, low carb worked well for me as opposed to being in 24/7/365 ketosis. During this time of self experimentation, I saw the variety of products out on the market designed for a ketogenic lifestyle. Aside from the keto water (no joke), the ingredients in the keto products appeared very harmful. The amounts of sugar alcohols and various other chemicals in these keto products could not be healthy. I come from a personal preference of organic whole foods. How can 20g of malodextrin at a time be good for you especially when combined with modified corn starches, sucralose, carrageenan, and other chemicals added to bring flavor of foods with zero nutritional value? So I delved personally into all the diet books and realized that each and everyone worked. My personal goal is peak daily human performance and longevity. I would like to be 150 years old and perform like I did when I was 25. Personally I combined a Mediterranean (nuts, olive oils, vegetables, fish), Paleo (organic version of Mediterranean) and keto (the first two but without the sugar). This is my own personal preference. What kept being put in my mind though was to re-create a Super Size Me type experiment but without being reckless. What if the subject consumed only the amount of calories they actually need? What if the subject wasn't looking to modify their body (weight loss or weight gain)? What if the subject continued with their regular workout program and continued in their current job (physician)? What if I could have an individual live a zero carb lifestyle for 30 days and determine if the food we eat is truly detrimental or the changes in the body are due to the type of nutrient. After "thinking about it" for the past three years, I got annoyed enough at myself and decided if I didn't make this film now, it will never happen. I brought up the idea on the Functionised Podcast too many times to count. One day in the FIT Lab I announced the plans to Chantea Goetz and Dr. Mike Brandon who were both immediately in. One of my most trusted associates, Dr. Michael Brandon (the same guy who lose 30 lbs in 5 days during a gentlemans challenge) volunteered to consume his calories each day in hamburger patties and consume only water. Chantea Goetz will be there to monitor his mental capacities. The FIT Lab at Functionised is able to quantify him on many physical levels. including physical activity, body composition and hormone/ nutrient levels. Dr. Sadar and Angelika Sadar (world renown neuro specialists) are there to monitor brain function. Over the course of the production of this film, I will be blogging and sharing some scenes from the movie. We will be having an amazing time traveling the world and bringing forth this film.
